What kind of vinegar?

Not sure about the vinegar….balsamic vinegar? Wine vinegar? Two completely different vinegars in preparation and taste. Advertised as balsamic, but the ingredient list on the bottle tag was wine vinegar. Which is it?

Thanks so much for your review and for asking this great question! We understand how ingredient labeling can be confusing, especially with the unique process behind true barrel-aged balsamic vinegar.

Here’s the scoop: Barrel Aged Balsamic is traditionally made using two ingredients: cooked grape must and wine vinegar. The grape must is fresh-pressed grape juice that’s been slowly cooked down until rich and sweet. The wine vinegar is then added to begin the natural fermentation process and bring balance and acidity to the final product.

So even though it’s labeled “balsamic,” seeing wine vinegar on the ingredient list is totally expected, and actually essential, for making a true barrel-aged balsamic. The result is that deep, complex flavor balsamic lovers adore.

Awesome sauce!

Many Olivelle products have elevated my cooking. Meyer Lemon Balsamic is one I reach the most. If a savory recipe requires fresh lemon juice, I use this vinegar. I make a fresh kale salad & use this to ‘massage’ the chopped kale; then add Olivelle Frontoia oil, grated parm, s&p. People want seconds and ask for the recipe! My initial bottle of Meyer Lemon Balsamic was 100ml bottle; now I buy the 500ml so I don’t run out.

Best salad dressing ever

We no longer buy premade salad dressings after using the Meyer lemon balsamic. With regular olive oil it makes a dressing suitable for numerous salad mixes including kale. We could buy this by the gallon!
